Soy protein is a protein isolated from soybeans. It is made from soybean meal which has been defatted and defatted. Shelled and defatted soybeans are processed into three types of high protein commercial products: soy flour, concentrates, and isolates.

The use of lecithin is as an emulsifier, thus SPI (soy protein isolate) used in the food industry also functions for nutrition, sensory, emulsification, water absorption and fat adhesive.
